Putting that Crock Pot to Good Use; Vegan Style!

No matter your dietary style, crock-pots are a home chef’s best friend!  There are so many meals that you can toss in the crock-pot to leave it and eat it later.  Today we will focus on 3; the chili, the soup, and the dessert!


Chili

Chilis are hearty and savory meals that can also be healthy!  It just depends on the ingredients that we add and focusing on flavor!  For a great vegan chili you have to dive into that spice rack and chop up some great veggies.  First up, toss in 2-3 different aromatic chili powder, add a variety of peppers like jalapeno and green bell pepper.  All vegan chili recipes need tomato paste, vegetable broth, and a variety of beans!  Healthy veggie add-ins include zucchini squash, red bell pepper, carrots, and garlic. Don’t forget to make it “meaty” with a crumbled up Beyond Burger or a black bean burger!  Top your vegan chili with avocado, tortilla strips, cilantro, or vegan cheddar or sour sour cream! 




Soup

Butternut squash soup is a fall favorite and is one of the easiest soups to make! Butternut squash can be made from scratch easily by roasting a halved squash in the oven, blending it up, and then finishing it up on the stove with a few cups of vegetable broth and seasonings.  Choice seasonings for butternut squash include rosemary, garlic, salt, pepper and add in vegan butter or dairy free margarine for extra flavor!

Dessert



For the easiest dessert ever, let’s make a fruit compote topped with crunchy granola and some coconut whipped cream or vegan ice cream.  To start this recipe off, toss in fruit like frozen mixed berries, apples, or peaches into a crockpot set on low.  If you like you can add a few tablespoons of your sweetener of choice such as coconut sugar or agave syrup!  Leave them in there for 3-4 hours until they are nice and soft and swimming in their juices!  Once you have scooped your fruit compote into a small bowl, top with vegan ice cream, So Delicious’ CocoWhip, or some crunchy granola! And wa-laa an easy fall dessert for everyone to enjoy!
